My “Secret” Pancake Recipe

by Heather Ferber on September 27, 2013

This is the basic pancake recipe that I work with when preparing pancakes for my family.  Often times, I will add in a variety of “extras” to mix things up a bit (i.e. pumpkin, cinnamon, vanilla, cardamom, dried fruit, nuts, cacao nibs, mini chocolate chips, etc).  But here is the basic recipe that I usually work from:

My "Secret" Pancake Recipe
Prep time
Cook time
Total time
Serves: 4
  • 1 cup whole wheat flour (or buckwheat flour)
  • 1 cup almond flour
  • ¾ cups oats (or ground into oat flour)
  • ¼ cup flax seeds, ground
  • 3 teaspoons baking powder
  • ½ teaspoon sea salt
  • 1 scoop protein powder, optional
  • 2-3 eggs
  • 1 tablespoon olive oil (or coconut oil)
  • 1 cup almond milk (unsweetened)
  • 1 cup warm water
  1. Heat griddle to medium heat (not high when cooking with almond flour).
  2. In a large bowl, mix all the dry ingredients.
  3. In a separate bowl, mix all the wet ingredients.
  4. Add the wet ingredients to the dry ones and mix well.
  5. Adjust batter to desired consistency with water or flour if needed.
  6. Cook pancakes.
  7. Top with maple syrup, nuts, berry compotes, yogurt, toasted coconut, or any healthy topping your little heart desires. Just try to skip the Log Cabin!
  8. Enjoy!
